Snack Platter - Feta & Olive Plate

If you are an 80’s baby like me chances are you had the pleasure of snacking on a Lunchable. I am completely convinced that this is where my obsession with a charcuterie board came from, so when I was asked to share a savory snack recipe my mind jumped right to a snack box. They are quick and simple and give you some variety, who doesn’t like variety?

These snacks are perfect for humans of any age obviously, but I have purposely made them school safe so that kids young and old can enjoy the pleasures of the snack box.

The best part is at the end of the day this recipe is more of a template then actual strict guidelines, which means you can switch out veggies for whatever you love most!

Ingredients

  • 1/4 cup cubed feta, real or vegan

  • 1/4 cup olives, pick your favorite

  • 1/4 cucumber, sliced

  • 1/4 bell pepper, sliced - pick your favorite colour

directions

  1. Slice and dice your vegetables and feta. Put your snack on a plate or in your snack container, and enjoy.

Notes:

  • Feel free to switch out the vegetables for anything you might prefer.

  • Not an olive fan, not a problem. Swap out your olives from some avocado or guacamole.

  • Like a savory/sweet combo, add a handful of grapes or 1/4 apple sliced.

  • Don’t like feta, use any other cheese you love or swap it out for a serving of almonds or cashews.
