Sunbutter & Jam Overnight Oats

These overnight oats are built to provide you with lasting energy, a healthy nut-free source of good fats, and a nice sweet punch to get your energy going for the day.

Not only will this meal provide you with lasting energy to get through your busy morning, but this fibre, iron, protein and vitamin-rich meal will help support your immune system, helping to keep you healthy through those cool winter months.

Ingredients

  • 1/3 cup All-natural Sunbutter

  • 3 tbsp Maple Syrup

  • 1 1/4 cups Unsweetened Coconut Milk

  • 1 cup Oats

  • 1 tbsp Chia Seeds

  • 2 cups Strawberries (finely chopped)

Directions

  1. Using 2 mason jars or any other sealable container, divide Sunbutter, 2 tbsp of maple syrup and coconut milk and give it a good stir. If your container seals well you can give it a shake instead.

  2. Divide the oats and chia seeds equally between both containers and give it a good stir.

  3. Coat the strawberries in the remaining 1 tbsp of maple syrup and give it a stir to coat. Divide the chopped strawberries into your oat containers, seal and place in the fridge.

  4. The oats need a minimum of 3 hours to “cook” but overnight is best, and let’s be honest easiest. You can enjoy cold or microwave in the morning for a nice tasty hot breakfast.
